Ingredients

Adjust Servings:
115 g (Room temperature) Butter
1/2 cup Sugar
2 Egg
1 tea spoon Orange Zest
1 tea spoon Vanilla Extract
2 Cup All purpose flour
1 tea spoon Baking Powder
1/4 tea spoon Salt
1/2 Cup Coconut Milk
3/4 Cup dried cranberries
1/2 Cup white chocolate chips

  1. Preheat your oven at 180 ° C and grease your muffin tray with butter or line with paper liner.
  2. Mix softened butter and sugar using a spatula until well combined.
  3. Add egg one at a time together with vanilla extract and orange zest and mix to combine.
  4. In another bowl, whisk together flour,baking powder and salt. Add the half of the flour mixture to the wet mixture.
  5. Add half of the coconut milk to the batter and mix well. Then add rest of the flour mixture and mix to combine well. Finally the rest of the milk and mix until you get smooth batter. (Do not over mix).
  6. Now add chocolate chips and cranberries and mix to combine.
  7. Scoop out the  batter to the prepared muffins tin and bake in preheated oven for about 25 to 30 minutes or until center comes out clean if tested with a tooth pick .

Tips & Tricks :-

You can also use blueberries, apricots etc or other dried fruits, if cranberries are not available. Even chocolate chips alone can be done.
