Adjust Servings:
500 g Mutton/Lamp Chops
3 table-spoon Oil
1/2 inch Cinnamon Stick
4 to 5 Cardamom
4 to 5 Cloves
1 tea-spoon Black Pepper
3 medium (300 g), finely chopped Onion
1 or 2 Green chilli
1 table-spoon Ginger Garlic Paste
Salt  - to taste
1 tea-spoon Red chilli powder
1/4 tea-spoon Turmeric Powder
1 tea-spoon Garam Masala Powder
2 medium very finely chopped/pureed Tomato (200 g/ 1  1/4 cup)
1 tables spoon chopped Mint leaves
1 table-spoon chopped Coriander Leaves
1/3 cup Yogurt

  1. Wash and clean the mutton-chop , pat dry and keep it aside.
  2. Heat oil in a non stick pan and add whole spices (cinnamon, cardamom,cloves,black pepper ) and saute untill you get nice aroma.
  3. Now add chopped onion and saute well untill it turn to soft and pink color ( about 4 to 5 minutes on medium flame)
  4. Then add ginger garlic paste and green chilli.
  5. After that add cleaned and dried mutton chops and saute well.
  6. Add salt to taste and close the lid and cook the meat for about 20 to 25 minutes by stirring time to time on medium flame. ( make sure not to burn the onion and mutton mix, you have to keep eye on it)
  7. After that, add chilli powder, turmeric powder, garama masala powder to it and mix well.
  8. Now add very finely chopped tomato and chopped mint, coriander leaves and mix well. Cook again for another 15 to 20 minutes by stirring in between on low flame.
  9. After mutton cooked well, add yoghurt to it and mix well and switch off the flame.
  10. Garnish with mint leaves and serve hot.

Tips & Tricks :-

  • Adjust the chilli/pepper as you prefer.
  • It took me total 45 minutes to cook the meat completely. Cooking time may vary as per meat and flame used. Adjust the time accordingly.
  • You must keep eye on the flame and meat. Since we are not adding water, it tend to burn. If your masala is too dry, you can add little drops of water while adding chilli, turmeric powder. But for me it wasn’t too dry, so did not add water.
  • Use non stick pan and cook mutton slowly. That is the magic in this recipe.( don’t use pressure cooker)
