Ingredients

Adjust Servings:
1 3/4 cup All purpose flour
1/2 Cup Buck Wheat Flour
1 1/4 Tea spoon Instant Yeast
2 Tea spoon Sugar
Salt to taste
1 Egg
11/3 Cup Warm milk
1/3 Cup Coconut Milk You can substitute this with redular milk
Enough to brush the pan + more to serve Butter
To serve powdered sugar

      Mix dry ingredients

      In a bowl take flour, buck wheat flour, yeast and sugar, and mix using a wire whisk.

      Add in the wet ingredients

      1. Slowly pour in the warm milk to dry ingredients and mix well without forming any lumps .
      2. Now add in egg and coconut milk and incorporate well. (see Tips & Tricks)
      3. Using a plastic wrap, cover the batter and keep in warm place for an hour.
      4. Add salt to taste before you start preparing the pancake.

      Prepare the Poffertjes (Pancakes)

      1. Heat Poffertjes pan on a medium flame, brush little butter all cavities. (See tips & tricks)
      2. Take a table spoon of batter and pour them to fill up the cavities. (If you are using unniappam chatti as I did, fill it half of the cavity.
      3. When the bottom of pan cake become light brown, flip them over using a skewer or fork.
      4. Once both the side cooked well and lightly browned, take them off.
      5. Sprinkle powdered sugar and few cubes of butter and devour!!!
      6. You could also use whipped cream and strawberries or fresh cream and fruit jam or drizzles of chocolate sauce as well.
      7. Enjoy them as you prefer.

      Tips and Tricks :-

      Tips and Tricks :-

      1. Make sure you use good quality yeast.
      2. If you are not using instant yeast, please proof the yeast with sugar and warm milk for 10 minutes or as per package instruction.
      3. You can make your own buck wheat flour by grinding buck wheat groats.
      4. Or else can substitute buck wheat flour with all purpose flour, if it is not available.
      5. Coconut milk is not used traditionally, it was my own addition for better flavor. You could substitute normal milk for that.
      6. Add a table spoon or more extra milk if your batter is too thick to pourable consistency.
      7. If you are not able to get hold of Poffertjes pan, use unniyappam chatti as I did.
      8. I used 1 Table spoon cookie dough scoop to pour in the batter easily. You could also use ketchup dispensing bottle, piping bag, zip lock bag with small cutting in one corner etc…
