Steps

1
Done
  1. Marinate the mutton with ginger garlic paste, garam masala powder and salt to taste.
  2. Keep them aside for 1 hour minimum.
2
Done

Make green masala paste

  1. In a blender, take all the ingredients for the green masala and blend them until smooth and keep them aside. (I have used only one green chili because, it was super hot. You can add as many green chili as you prefer).
3
Done

To make curry

  1. Heat oil in a pan and fry cloves, cardamom and bay leaves for few seconds.
  2. Add in sliced onion, and saute until soft and light brown color.
4
Done
  1. Now add marinated mutton and mix them well, cook them for ten minutes by closing the lid and without adding any water.
5
Done
  1. Now add green masala paste, enough salt to taste, together with enough water to cook the mutton (i have added about 1 1/2 cup), close the lid and cook them for about 20 to 25 minutes or mutton is almost cooked on medium flame. You need to stir them in between and make sure not to burn them.
6
Done
  1. Then Slice small onion into rings and add them to the mutton, together with lemon juice and half tea spoon of garam masala powder, little bit more water. (You can add more water if you want gravy to be thinner).
  2. Close the lid and cook again for another 5 minutes.
  3. Garnish with more onion rings and serve them hot with your preferred breadRiceMalabar kalathapam, pathiri etc.
