Ingredients

3/4 Cup Oats
1 Banana
1 Egg
1 Tea spoon Vanilla Extract
1/3 Cup brown sugar
1/4 Cup Milk
1/4 Cup Melted Butter
1/4 Tea spoon Salt
1/4 Tea spoon Baking Soda
1 Tea spoon Baking Powder
2 1/2 Table spoon Unsweetened Cocoa powder
1/2 Tea spoon Instant Coffee powder
75 g Semi sweet chocolate

Steps

Prepare oats flour

  1. Dry roast the oats in a pan for 5 to 6 minutes and keep aside to cool down.
  2. In a food processor or grinder powder them very well.

Prepare muffin batter

  1. In a bowl mash banana using a fork or masher.

  1. Add in egg and mix them.

  1. Pour in milk and melted butter, incorporate well.

  1. Add in vanilla and brown sugar, mix them well until sugar dissolve in banana/egg mixture.

  1. Now mix in salt, baking soda and baking powder.

  1. Now add in cocoa powder and instant coffee and mix.

  1. Then add in oats flour which we prepared at the beginning. Add them in 3 batches and mix without forming any lumps.

  1. Finally add in chocolate chunks/Chips to the batter and mix just to combine.
  2. Keep the batter aside for 10 minutes. (Because oats flour absorb the moisture and make the batter little more thicker, so make sure you do this step).

  1. Preheat your oven at 180 º C and line your muffin tray with paper liners. (You must use muffin liners for this recipe, because we are using oats flour, muffins may break apart. It might be difficult to handle after baking. So it would be easy to serve if you use liner).

  1. Fill the batter 3/4 of the liner and bake them in a preheated over for about 15 to 18 minutes or until skewers comes out clean. (Each oven time may vary, so keep an eye on your oven while baking).
  2. Cool them down completely by keeping on a cooling rack and serve with your coffee/Tea.

  • You can substitute all purpose flour/maida instead of oats flour.
  • You can also use store bought oats flour instead of roasting and grinding them yourself.
  • Brown sugar can be replaced with regular white sugar.
  • You can freeze these muffins. Simply reheat them in microwave before serving, if you have freezed them.
  • This recipe can be easily doubled.
