3 medium Carrots
1 medium Potatoes
2 tea spoon Olive oil
3 to 4 cloves Garlic
1 tables spoon (very finely chopped) Coriander Leaves
1 1/2 to 2 cups chicken/vegetable stock
Salt & Pepper – to taste

  1. Peel carrots and potato. Cook it in a pressure cooker for 2 whistle and cool it completely. Then blend the cooked vegetables and keep aside.
  2. In a deep bottom pan, heat olive oil and add chopped garlic and saute well until you get nice aroma.
  3. Then add in finally chopped coriander leaves and saute well.
  4. Then add in blended carrot & potato mixture with chicken/vegetable stock and mix well. Bring to boil.
  5. Season with salt and pepper as per your taste.
  6. Yummy and creamy carrot soup is ready. Serve hot.
