Ingredients

Adjust Servings:
For meat balls
250 g (without bone) Chicken
2 Tea Spoon Oil
1 Small Onion
1 Clove Garlic
1 small Egg
1 table spoon chopped Parsley
3 table spoon Ground oats
To taste Salt & Pepper
For Soup
1 Table spoon Oil/Butter
1 small (1/2 Cup chopped) Onion
2 Cloves Garlic
1 medium (1 cup shredded) Carrots
1 Cup shredded Cabbage
1/4 Cup chopped Celery Sticks
1/2 Tea spoon Black Pepper
1 Bay Leaves
6 to 7 Cups Water

    Prepare chicken meat balls

    1. Mince the chicken in your food processor or meat grinder. (you can also use store bought chicken mince)

    1. Heat oil in a pan and saute chopped onion for the meat balls with enough salt until light brown color.

    1. Take chicken mince, sauted onion with rest of the other ingredients for meat balls in a bowl.
    2. Mix well with your hands.

    1. Make uniform sized meat balls. I have used 1 table spoon cookie scoop here.  So I got … chicken balls.
    2. Keep them aside.

    Prepare the soup

    1. Shred and chop all the vegetables require for the soup.

    1. Heat oil/butter in a deep bottom pan.
    2. Add garlic and onion and saute well until onion is translucent.

    1. Now add carrot, cabbage and celery and mix well.
    2. Add salt to taste and cook them on medium low flame for about 4 to 6 minutes.
    3. Add in black pepper cones and bay leaves.

    1. When the veggies are soft, add water to the veg mixture and close the lid and simmer.

    1. Now slowly add prepared meat balls to the soup and cook them for about 15 minutes.
    2. Season to taste and switch off the flame.
    3. Serve them hot with your favorite bread.

    Tips & Tricks

    1. Use your choice of vegetables.
    2. You can use chicken/vegetable stocks/broth instead of water in the soup.
