1 Egg
1 Tea spoon Instant Yeast
2 Tea spoon Sugar
Salt to taste
1/3 Cup Coconut Milk
1/3 cup warm or as required Milk
To deep fry Oil

Prepare the dough

  1. Take all dry ingredients in a bowl and just mix to combine.
  2. Then add egg, coconut milk and then slowly add warm milk and mix.
  3. Don’t add the milk all at once. Since different flour absorb liquid differently, add them as require.
  4. Kneed the dough for about 8 to 10 minutes well using your hands or you can use hand mixer too to make the dough, kneed about 4 to 5 minutes if using them.
  5. Your dough should neither be too dry nor too sticky as well.
  6. Grease a bowl and place the dough, cover them with a cling film or damp cloth.
  7. Keep them in a warm place for about 1 to 2 hours depends upon your kitchen temperature, it should double in volume.

  1. using your fingers, just press the dough to release the air formed.
  2. Make 12 equal sized balls.
  3. Dust some flour on work surface and roll the dough into your desired shape. (I rolled them into circle and cut them to half moon shape). It should not be too thick or too thin as well.
  4. Cover rest of the dough with a towel, while you rolling, else dough may dry out.

Deep fry the Bhatoora

  1. Heat oil in a deep pan on a medium high heat. (Ref Tips& Tricks )
  2. Add rolled dough and press gently with back of your spoon to ease up the puffing of bhatoora.
  3. Fry both sides until it turns golden brown.
  4. Take them off to kitchen tissue to drain the excess oil.
  5. Repeat the same with rest of the dough.
  6. Serve Bhatoora hot with your favorite curries.
  7. We often serve them with Indian Butter Chicken , Kerala style Mutton Kurma or Chicken Korma.

Tips & Tricks

  1. Use good quality yeast and since I used Instant yeast, I added them directly to the flour. Use package instruction of your yeast.
  2. Your oil should be sufficiently hot before frying the Bhatoora. If it is not heated properly, Bhattora will absorb more oil. If it is over heated, it will burn them out quickly without cooking batoora evenly.
  3. To check if oil is sufficiently hot, add small piece of dough to the hot oil, and it should come up briskly and dough will change its color lightly. (not too dark).
  4. I have used plain flour here, but you can use combination of both plain flour and whole wheat flour as well.
