Adjust Servings:
250 g Beetroot
1 Small Onion
2 Cloves Garlic
1 Table spoon Butter You can use Olive oil too
1 Vegetable stock cube
Salt & Pepper to Taste
2 Cups Water
1 Tea Spoon Lemon juice

Health Tips :-

  • Beet is an excellent source of folic acid,fibre,manganese and pattassium.
  • It helps to stimulate liver detoxification   process, which also helps to lower blood pressure.
  • But beetroots are high in oxalates,that could increase the risk of kidney stone.

  1. Pressure cook the beetroot and 3/4 of onion and 1 garlic upto 3 to 4 whistle with 1 cup of water.
  2. Grind the cooked veg with water which used for boiling to a smooth paste.
  3. Heat a deep skillet and melth butter and add 1/4 onion 1 garlic chopped. Saute till its light brown.
  4. Pour the grinded smooth mixture to the butter and saute and cook for 2 to 3 mins.
  5. Now add veg stock cube and 1 cup of water, salt and pepper to taste and boil.
  6. Now add lemon juic.
  7. Garnish with dill leaves and serve hot.

Tips & Tricks

  • You can substitute butter with olive oil or completely avoid oil for more healthier version.
  • Increase or decrease lemon juice according to tanginess you like.
  • Take good care while adding the salt,since veg stock cubes may have enough salt.
