Ingredients

Adjust Servings:
For Crust
100 g Pretzel Sticks
90 g Butter
A pinch of Salt
2 tea spoon Sugar
For cheesecake layer
300 g Cream cheese
1/3 Cup Sugar
1 Egg
1 Egg yolk
1 Tea Spoon Vanilla Extract
A pinch of Salt
1/2 Tea spoon Lemon Zest
1 Tea spoon Lemon juice
1/2 Cup Sour cream
1 Cup Blueberry

Steps

Prepare the Crust

  1. Preheat your oven at 190° C, and line  7*6 inch baking pan with parchment paper.
  2. Crush pretzels, salt and sugar in a food processor. Don’t make them powdery.

  1. Add in softened butter and process them until well combined.

  1. Transfer pretzel mixture to prepared baking pan and press them evenly.
  2. Bake them in preheated oven for 10 minutes.
  3. Keep aside to cool down.

Prepare cheesecake layer

  1. In a bowl beat cream cheese and sugar until light and fluffy.

  1. Add in egg, egg yolk, vanilla, lemon zest, lemon juice, salt and mix them using electric mixer until even and smooth.

  1. Now add sour cream and mix until well combined.

  1. Add in blue berries and slowly mix with spatula without breaking the berries.
  2. Pour the mixture over baked pretzel crust and bake them in preheated oven for about 35 to 45 minutes or until sides become light golden color. (Center will be still little giggly, they will become firm when refrigerate).

  1. Turn off the oven and keep the cheesecake inside the oven itself for another 30 minutes by keeping oven door slightly open.
  2. Chill them at least for 3 hours or over night would be great.
  3. Cut them into desired shape and serve.

Tips & Trcks

  • You could use frozen blueberries as well. If using frozen, thaw it and pat them dry.
  • You could also substitute other tangy berries of your choice.
